Mean Green Salad


Ingredients (Serves 2):

100g kale

100g spinach

4 cloves garlic (crushed)

1 tbsp capers

12 kalamata olives

6 sun-dried tomatoes

2 tbsp sunflower seeds

1/2 lemon

Sea salt and freshly cracked black pepper




1. Start by removing any thick stalks from the kale, then place it in a steamer along with the crushed garlic. Steam for 5 minutes.


2. While the kale cooks, slice the sun-dried tomatoes and olives.


3. After the kale has been steaming for 5 minutes, add the spinach and steam for a further 2 minutes. You want it to just slightly wilt, not cook, so keep an eye on it.


4. Once the kale and spinach has been steamed, add them to a bowl with the rest of the ingredients and mix together.
